2. Mandatory Cleaning and Inspection Intervals

  • Extraction hoods and collection gutters: Monthly deep hot-water degreasing.
  • Horizontal and vertical exhaust ductwork: At least every 12 months; every 6 months for heavy cooking (woks, commercial fryers, solid-fuel grills) by a certified specialist.
  • Exhaust fan and rooftop extractor: Annual technical inspection and motor degreasing.

If a restaurant increases frying capacity or extends operating hours, statutory inspection intervals shorten automatically under VKF rules.

3. Inspection vs. Cleaning: Who is Authorized?

Swiss regulations distinguish between routine kitchen maintenance and certified fire safety remediation.

Routine hood wipe-downs and filter washes can be performed by in-house staff. However, cleaning entire duct networks, access doors, and exhaust blowers requires high-pressure hot water and chemical saponification agents.

Property insurers and local fire authorities require formal certification from a recognized cleaning specialist confirming smoke-tight resealing of all access panels.

4. What Property Insurers (GVZ) Require Following a Fire

In commercial kitchen fires, grease accumulations inside ductwork are the primary cause of rapid fire spread into upper building floors or adjacent properties.

Following an incident, the cantonal building insurer (GVZ in Zurich) and commercial property insurers demand complete inspection logs.

In the absence of written proof of certified duct cleaning, insurers may reduce or deny claims citing gross negligence under Art. 14 of the Swiss Insurance Contract Act (VVG).
